Starter: Lamb Kofta on lemon grass with Mango Puree

Ingredients

* 500 g lamb mince
* 1/2 onion
* 50g almonds (Crushed)
* salt and pepper grinders 1 each
* 1 red chilli
* 1 tea spoon apricot jam
* 1 tea spoon chutney
* 2 eggs
* 1 cup bread crumbs
* 1 lemon (squeeze)
* 5 g curry powder
* 5g turmeric
* kebab stick (about 20)
* 10 each lemon grass

 

Method

Lamb Kofta

Chop the onions up finely. Mix all the ingredients. Roll into an oval shape ball (similar to the shape of a small rugby ball) and insert the kebab stick. Then you can grill till cooked. Once cooked you can remove the stick and replace them with the lemon grass.

Mango Puree

1x Fresh mango in food processor till smooth.

 

Main: Beef Fillet with Deboned Oxtail

Ingredients – Oxtail

* Salt and pepper to taste
* 20ml Olive oil
* 1kg Oxtail
* 250g Bacon (Diced)
* 8 Baby Onions (Halved)
* 1 Large leek (washed and coarsely chopped)
* 30gram Fresh Rosemary
* 4 Carrots (Sliced)
* 30ml Garlic Flakes
* 375ml Port/red wine
* 750ml Tomato puree (two tins tomato peeled)
* 30grams Brown Sugar
* 500ml Beef Stock
* 3 Bay Leaves

 

Directions

Heat a little olive oil in a saucepan. Sear the oxtail until browned. In the mean time in a casserole dish add the chopped onion, leeks, bacon, carrots, rosemary and the garlic flakes. After grilling that for about 3-4 minutes add the tomatoes, brown sugar then the red wine and beef stock with the bay leaves, bring to boil add the oxtail then simmer for +- 3 to 4 hours depending on your heat (simmer until the meat is tender) You can top up with water as the sauce will reduce, stir occasionally. Remove from the heat and use a butter knife to remove the bone or you can cook the oxtail for a bit longer till the meat falls of the bone then remove the bone. Season to taste.

Potato Quenelles

1.2 kg peeled potatoes
100ml cream
100ml butter
Salt and pepper to taste
Boil potatoes until soft, strain off all excess water, lightly season with salt and pepper, add the cream and butter and blend until smooth. Using two metal table spoons shape potato into oval quenelles.

Fillet

6 by 150gram Beef Fillet
Salt and pepper
Sear meat on both sides cook to desired temperature, remove from heat and leave it to rest.
